2003 ProStar 209 Operating Temperature?

I have a 2003 ProStar 209 with a closed cooling system and the LQ9 engine. It idles at about 180 degrees (F) but when I open it up and pull a skier it drops back down to 160-165 degrees (F). I called Indmar and they said this is normal and not to freak out because closed cooled engines run hotter at idle. I also took it to MasterCraft and they said it was fine. Has anyone else experienced this?

I have an Indmar engine package, and it stays right on the 160 mark under all conditions.
