Anywhere from about 60'-90'. Figure out what speed you feel most comfortable with, then your ideal rope length will be just in front of where the wake starts to wash over. The faster the speed the farther back you will be. If you are having a hard time clearing the wakes, keep shortening the rope in 5' incraments until you are comfortably landing on the downside of the second wake. Beginners are usually at 60-70' while more advanced riders usually are 75-90'. It is all just a matter of preference.

Cary hit it right on the head with length. Speed will be between 18-24 mph depending on rider ability and ballast.

My buddy has a 2000 X-Star with a custom ballast (around 1500 lbs) and I usually ride 65-70 feet at 23 mph.
