Those should work.

When you put 2 together, you'll probably need to mill them down so they match the width of the stock cast iron wheel.

The delrin hub was almost made.

Was the derlin hub just a spacer to fill the gab on the longer axle or for something else? Any reason it has to be a derlin hub? Could I just use some stainless washers? Do you have a pic of the final bit all assembled? Would appreciate that as I'm trying to replicate. Thanks a ton in advance.

Sorry for the delayed response.

The Delrin hub served as both a spacer and a smooth strong surface for the "axle" (the bolt) to ride on. It doesn't have to be Delrin, that was the material that we had laying around. You could definitely use something else. The thing that I was trying to accomplish with the Delrin hub was to make a strong surface that the wheel could rotate around without causing the wheels center to go out of round.

I'll try to find some pictures of final assembly. If I can't, I'll take some new ones and post them.

The company I work for has 3 machine shops. I had one of my buddies make these. Unfortunately, we don't do outside work. He did this as a favor. He's made several other parts for my boat too.

I just realized the wheels I ordered have a hex axle hole - expected a hex axle. This won't work will it? Assume I need a round axle wheel to create the spacer between the wheel and the bolt?

Yes, round axle hole unless you can find some hex stock the same size as opening in the wheel. I'm still working on pictures for you. My trailer is at an offsite storage location because I never use it.
