Turkey Cook PSA

As noted in my earlier Turkey threads from prior seasons, this is my favorite meal of the year to cook and eat.

Unfortunately, there have been salmonella outbreaks from turkey in recent weeks causing 170 illnesses and 1 death. Jennie O Turkey has recalled all of their ground turkey recently and reportedly cannot identify farms or meat processing plants where the outbreak emanates from but implying that it could impact many other turkey producers.

Soooo, using the same OCD we all apply to our boats, I went asking several local butchers for their advice to avoid getting sick from Turkey this season, cause me and my loved ones are gonna eat turkey.

Cooking tips follow to avoid getting ill, as luck would have it, they do not vary much from normal turkey cooking recommendations:

1) Oven at 350F cooking temps for 16-20 minutes per pound or until breast temps with meat thermometer show 160F. All salmonella will be killed off between 150-155F meat temps. Do not use the legs or thighs to measure meat temp.

2) Does NOT recommend stuffing a raw turkey. Helps cut down on contamination and allows the bird to reach proper 160F breast temps without overcooking.

3) If using a smoker or BBQ, does NOT recommending cooking temps below 275F as ideally you want the bird to cook by constantly increasing meat temperatures and not stalling.

Green Egg @ 375 until 155 on the breast meat and legs to 170 ish.

22lb. On the XL Green Egg right at 5 hours, 275 degrees. 18 hour brine dunk.

I'm getting excited!!!

Always go to the in-laws for Thanksgiving until this year. First time in over 20 years we will be at home. I will be firing up BGE for a turkey for the first time tomorrow. Any last minute advice? 14 lb bird going into the brine tonight.
