southeast MN lakes

The wife and I are going to take a short vacation at the end of July. It's just going to be us 2, so I'm thinking MN is a good option since you don't need a spotter. The twin cities are 5 hours from us, and I'd like to not drive farther than that, so anyone have recommendations for lakes. Here's what we're after:

southeast MN
good ski water (we're leaving on a Sunday and coming back around Wed, so weekend lake traffic shouldn't be an issue)
quiet lake, don't need a party cove
cabin on or near the water
slip for boat would be nice

I'm not too familiar with lakes south of twin cities, but you may want to consider the St. Croix river between Stillwater on north side and Prescott, WI on south. Lots of traffic on weekend, but relatively quiet on weekdays. May be a place to rent with a slip in Afton, MN.

The wife wanted to take the dog, so that made things more complicated. We couldn't find anywhere to stay as close as we wanted, so we ended up getting a place at Bay Lake (near Mille Lacs Lake). Anyone familiar with the area have any recommendations for places to go, things to do/see in the area?

Yes, but it's the condos a mile away from the main area. We still have access to the main Rutgers facilities.

Bay Lake is a very, very nice lake. Ruttgers is one of the original (some would say the original) Up North resort and it is excellent. It's been around and family-owned and operated since about 1900. I haven't seen the Battle Point condos but I hear that they're nice.

If you golf, Ruttger's course is pretty good, but within 20 miles are three of the best championship courses in the midwest. If you mountain bike, you should absolutely bring your bikes - the Cuyuna Trails about 10 miles away in Crosby are absolutely world class mountain biking trails. You can also kayak or canoe around in the various mine pits (it's a beautiful area despite the sound of "mine pits" - they're abandoned some 30 years ago and are now a large state recreation area). If you prefer, you can rent bikes, canoes, kayaks, etc. There's a place in Crosby called Cycle Path that rents all that stuff.

If you fish, Mille Lacs has fantastic fishing opportunities (as long as you don't do it in your MC). There are plenty of guides available as well as launches (large party-fishing boats) which will take you out for some serious walleye fishing. Hooking up with a local guide can get you on some huge muskies. I caught these two last weekend.
