We stayed at the Moon Palace Resort when we were there. Most amazing resort we've been to. Food was fantastic, service was exceptional.

one of the guys that works for me goes a bit farther down to Akumal (~45 mins - an hour south)and has stayed at several very nice (reasonably priced) all inclusive resorts for the past 10 or so years. I will see if I can get the names of those he would recommend.
he provided me with a link to a live webcam (refreshes every 10-20 seconds) from that area that I have up all day long on my other work computer so I can glance over to ponder it from time to time during the day to take my mind off work related stresses ... ~~> http://www.locogringo.com/Upload/akumal-beach-cam.html

You can't go wrong with any of the palace resorts. If you don't want to stay right in Cancun there are several palace resorts on the Riviera Maya(45-60 min. from the airport). We stayed at the Aventura Spa Palace which was adults only and we really liked it. Most of these resorts have 5 or 6 restaurants in them so you don't need to go anywhere unless you want to. Last time we stayed right in Cancun at Cancun Dreams(no problems). Was a great place. I think it had 7 restaurants. They also had their own dolphin tank and you could swim with them which we did and was a great experience.

Sandos Playacar Resort (not Sandals) in Playa del Carmen. It is large but we have stayed their twice and would go back again. Best beach by far of all the resorts in the area!

I was checking that place out on tripadvisor... it is definitely nice. Might have to look into that kind of trip this summer. All inclusives are great if its a really nice resort like that one.
