I did keep the original plate under the larger plate, it sort of acts like a shim for the larger plate. I really wonder what could have caused this. I have been using a high pole for the past 7 years or so. Or maybe the from 30 years of trailering?
Are your bunks appropriately aligned? The tension on the bow loop should be pretty minimal once the boat is on the trailer. Just enough to keep the boat in place. My trailer has a metal strap that hinges up and has a slot for the bow loop. Then the bow strap really doesn't need any tension, just snug to activate ratchet on the winch. If your boat is not sitting flat on the bunks or the bunks are not straight, your boat might be rocking and putting abnormal pressure on the bow loop.
