Did you try removing the canvas of the bimini and leaving the structure up. It would not catch near as much wind. I think you can take the canvas off but not sure.

I have broken the brackets on my X star twice and that is just from people while the boat is at rest. A 350 lbs stand up will do a number on the brackets if you tow it down the road.

A X25 with stock ballast is a decent amount steeper than a Xstar with stock ballast. If thats the style of wake you want, you are going to only want to add weight to the back. I would say 200-400 lbs...
