If you've got only 2 kids, a 197 should give you enough room. I haven't been in a 195 or 205 but we routinely carry more than 4 in our 197. And as noted above, that TT will be a sweet ride!

As a former owner of a 18' outboard with a 68mph top speed, DO IT! That looks like a fun ride, maintenance and upkeep is simpler and less expensive than the MC by far, and you won't be loading it up...
