Nice brisket! I always put the plate setter with the feet up and place a drip pan with some liquid in it under the meat. But there's no arguing with your results. Looks great.

That's a nice looking hunk of meat Scott. What was the problem? Did it cook too fast? The last one I did -- a 12 lb brisket -- took about 14 hours to cook. ...
