We use a 2pc. FlyHigh. Only takes a couple minutes to deploy/stow. The boards kinda act like a mini bimini. If you go this route be sure to get or make the rope guide.

Here's the rig. It takes 7 minutes to fill the sacs. The wake is a bit steeper if we remove the rear seat so the sac can get all the way back but the steering hunts a little then. Maybe a little more...
