The boat I purchased last fall has a heater in it. I have been summerizing and noticed that the two heater hoses from the engine run up along the engine, through the gas tank area, through the center of the boat (the place where you can take off the 6"ish diameter cap to get to the plug on the bottom of the boat), and then head up toward the dash area under the floor.

Where do they end up? at the blower? (or is this where the blower is?), is there any thing that appears to be hidden in this area (under the dash/kick panel) that I need to make sure is reconnected before firing the boat up. I don't want a leak somewhere that I can't see it.

The hoses probably run up to the heater core. The core & fan are in a metal box. There isn't really anything to summerize there. If there was a problem, you might have to get in there to find a water leak or a bad fan or something.
But winterizing, you will want to be sure the core is drained or you WILL have a leak come spring time. I just cut both the heater hoses at the lowest point in the bilge & installed a pair of the Prestone radiator flush Ts in them. Then when it's time to winterize, I just unscrew the two caps & let the water drain into the bilge. DONE!
