Changing valve cover gaskets...

Do the exhaust manifolds need to come off for this (to get adequate access) and if so, any reason I can't use Ford car Exhaust manifole gaskets?

Removing the manifolds makes it easier to do the valve cover gaskets and you can use RTV to seal the exhaust manifolds. I would see if neoprene gaskets are available, they're a lot more durable than cork.
