The previous owner of my Maristar 210 included Fat Sacs with the boat and I have never used them. Anyone have any tips on how/when to use them?
Something about putting a thousand pounds of water in my boat that makes me think you might need to drive a little different.
Any good stories about what not to do?

Sure. You take them out, I send you money, and you don't worry about it.
But seriously are they built in or use a portable pump? Have sizes and quantity?
use it for wakeboarding only. If you use them while tubing or cruising the God of water will strike you down.

Fill em and forget em..........at least for wakeboarding or surfing. If you put alot of weight in the bow, be cautious when coming off of the throttle and don't dip the bow.
I run around 2,000 lbs in my boat and even my wife is comfortable driving it with the extra weight.

and... if you put alot of weight in the back make sure you goose the throttle when coming off plane or else you'll take the rooster tail over the back...
