Hello,
I have looked at a number of 1991 and 1992 Tristar and Prostar Mastercraft boats and it seems like many of them have replaced the steering cable, why is this? Is their a way to prevent the steering cable from breaking? I would assume that if the cable breaks under a load, it could be very dangerous?

Also, what is a clean 1991 Tristar worth?

The cables just wear out over time. It is good maintenance to turn the wheel every month during storage. Keep the cable properly lubed at the helm and the the rudder. You may notice stiff steering or slack steering which would be a good indicator to replace your cable before it breaks.
