there seems to be a lot of opinions out there on the best proceudre of keeping the gel coat and hull clean and looking sharp. i just purchased a 2000 Maristar in excellent condition and i am looking for recommendations on what to do after each use, what do do periodically and at the end of season in regards to gel coat/wax care.

These is my favorite for keeping your gelcoat looking new.:)
Once or twice a year with these two products and you'll be protected from fading and lake scum will just wipe off. If you leave your boat in the water for extended periods, don't forget to wax the bottom of your hull at least once a year also.

I just finished one complete season with this stuff (I applied it Oct 08 before storage) and really noticed a reduced amount of water spots and lake scum on the hull. I am impressed with it. A bit pricier than normal wax but sure did a better job.
Before application, I made sure I did a good job of cleaning with the Lysol toilet bowl cleaner and buffing the hull so it was nice and shiny. It stayed that way all season.
