What is the stock size of '07 ballast hoses? I think it is 1" but I'm not sure. I need to order some Fly High fittings for extra sacs and wanted to be sure. My boat is 200 miles from here.

1 " is what fits perfect on the ballast puppy pumps. I am in the process of designing a system to get more, and am debating on where the best place to get hose is. Some of it is not recommended to be used below the water line, so I am a bit leary, even though it looks identical to what I already have.

You are correct, 1" hose size.

I just found this http://www.waterskis.com/MasterCraft-Black-Ballast-Hose-p/ballast_black_hose.htm for hose. It is slightly more expensive, but sold by the foot, not by 50 ft rolls, so if you only need a bit, it could be cheaper overall. It is supposedly the same as stock hose.
I found some black 1" i.d. hose in the pond and garden section at Home Depot. Its not exactly like the stock hose but its only $20 for 25'.

I think the 1" Hot Tub Hose that can be had at the your local Home Depot/Lowes ect. is the same except it's white. I ended up getting the black hose through FlyHigh, but I had some boom parts that I was exchanging at the time. A little tip that really helped me when I was making connections with the hose was to boil some water and put it in a thermos. When you get ready to put the hose on dip it in the hot water for about 10 seconds and it will go right over the fittings.

That might be good stuff. Make sure it does not collapse when bent tightly, and that it is non-collapsible when a strong suction is applied to it. For example, my Home Depot carries some hose, but it is the clear stuff without ribbing and it will both kink and collapse in a heartbeat, that would be a bad choice.
