If you pull off the tire there should be a fill/drain plug (possibly two, and inboard and outboard plug) on the hub assembly. It will be flush and you'll need a proper size allen wrench to get it out. You can use 50W motor oil, or better yet 80-90W gear lube. On your year trailer, I'm not sure if the hub cover unscrews from the hub or if you need to pry it off - best check the manual for that. At any rate, removing that hub cover is the fastest way to drain the hub. Refill about 3/4 of the way up the sight glass and be sure to use anti-seize compound on the drain plug.

The hub cap on my 2003 is a press fit. Better to drain though both allen screws. One is centered on the hub body the other is in the cap. Fill as vogelm1 states above. I fill mine to little more than half way.
