I have a 1994 prostar 190 with the fuel injected engine,,, I'm assuming it has a 160 thermostat in it. It doesnt seem to get very warm,,,, is it okay to go to a 180 temp thermostat?

Is it getting to 160? If not the thermostat may be stuck open.
Just use the 160 degree. If it never rises, make sure the oil cooler isn't clogged. Hot air doesn't transfer heat as well as hot water.

id be wary of having too low a running temp as this may affect the performance and smooth running of the engine .
It may run smoothly with a lower thermostat but it will never be very efficient since it won't reach normal operating temperature. In a car ot truck, the thermostat can be as high as 190-200, depending on where it's used, but that's also using a closed cooling system with a radiator. 160 degree is the original part.
