I have a 1988 Prostar that runs real well. How do you tell what kind of engine it has; Ford/GM?

Welcome to the Club, I am not certain either but I think back then it was all Ford (351), Someone will be along shortly to get it right.

Unless it was a optional Indmar Chev 350 or 454, it would be a Ford 351 Windsor and it should look something like this with the distributor on the front,

chances are its a ford/indmar 351,

if you check some of the pulleys you should see the ford logo stamped on them .

Ford motors generally have the distributor at the front and GM generally have it at the rear. Also, there's usually some kind of logo cast into the block or heads. If the original engine is in the boat, it may have a tag on the oil pan and if it was Indmar, the serial number would start with IF when it has a Ford or IC if it has a Chevy motor.
