I have an 07 x2 with the extra ballast system does anyone know anything about what would be the best prop. Would the one that comes with the boat as standard be the best for a fully loaded boat?

Depends on what you do most and at what speed. Eric at OJ Props will have the best advice.

I agree with Tricky. There is no one best prop. There are props that are designed for low end grunt and there are prop for max top speed, and a bunch of compromises in between. Best move is indeed to call OJ or ACME, tell them about your boat and what you want to do with it. They'll recommend a prop and stand behind their recommendation.

What prop is on there now?

Most heavily weighted X-2's and X-stars perform well with either the OJ 14.25 X 14 or 14.25 X 14.5 prop. I'm running the OJ 14.25 X 14.5 on my '05 X-star with total ballast of 2200 lbs. My buddy has the same prop on his '06 X-1 which also performs great. Unless you do alot of barefooting, either of these props should work well for you.
