While adjusting my play lists and trying to remove some songs, I can't seem to completly delete songs. You can check and uncheck them, but I can't delete them. Is there a trick to it or am I stuck with unwanted songs?

You should be able to right-click on the song in your iTunes playlist and select "delete"

I don't know of a way to delete them on the iPod itself. You have to use iTunes like Bigmac said above.

If anyone knows of a way to delete stuff on the fly, please let me know.

I don't think you can delete them from the iPod directly, it has to be done via iTunes either automatically when syncing, or manually if you choose that option for iPod management in iTunes.
