is there a way to check the coil to ensure that you are getting correct current?

You could check voltage and current to the coil. That may tell you something, but as far as the output of the coil, that might be difficult, I am not familiar with multimeters that read to 50,000 volts. Rest assured that the coil does degrade over time, all ignition parts do. While I think it is more important to change wires, cap, and rotor first, the coil does need attention too. You may notice an improvement with just replacing the cap, wires, and rotor. I put all new stuff on the boat this year, probablly won't next year. I do all new ignition parts on my mustang every year, but that is another story.
