'89 Tristar 351. In neutral, it is at about 1000 rpm. When I shift into gear, just as it catches it is at about 600. Is this right?

I experienced this after I had my carb rebuilt. Turn your idle up and then adjust the sets of two small screws (toward the front) on either side (port and starboard) of the carb. Play with the adjustments until everything sounds perfect and then you can reset the idle screw. If dialed in correctly it should correct the problem...

My '89 tristar 190 idles at 500 rpm and when it engages stays at 500 rpm to idle along.

Target idle speed is usually 650-700. You can adjust the fuel/air mixtures on each side, then set the idle to your desired speed. There are about a hundred threads here with detailed instructions on how to do this, do a search.

In the '89 owners manual, idle speed should be 650rpm in gear.

When I picked my carb up from a rebuild the guy instructed me on how to adjust the fuel/air mixture on the sides. "Once you have it, it will sing to you," he said. I wasn't really paying much attention and didn't think about this again until I realized I would have to make the adjustments. I wasn't really sure what I was doing, so I just played with the screws, and eventually got everything perfect. Sure enough, it was "singing" and the boat has idled perfectly in and out of gear ever since. Don't be afraid to play with the adjustment, but remember it doesn't take much.
